This coffee comes from Mae Toey village,  Chiangmai Thailand. Mae Toey this year has ranked #1 of the Best fully washed coffee from the Thai Specialty Coffee Awards 2022. 

The farm is healthy and beautiful with a fertile soil and a good altitude, which is perfect for growing quality coffee. The coffee plants are grown on slopes and under towering trees so they receive a good amount of sunshines and a right amount of shades, keeping the forest healthy and making the coffee plants to produce beautiful coffee cherries.

The coffee cherries are handpicked only when they are fully ripe. The cherries are then processed using the fully washed method: The cherries are pulped using the pulper machine. The coffee is then fermented over night between 12 to 20 hours. After, the coffee is washed in clean and fresh water to remove all traces of the mucilage. Next, the wet parchment is moved to dry on tables in a dryer dome with the controlled temperature of no more than 35 degree celsius. The drying took place between 7 to 14 days depending on the weather conditions. The parchment is turned regularly for even drying until the final moisture content reaches  9% to 11%. The coffee is then kept in parchment resting for a minimum of 60 days before the final dry milling and sorted prior to sell.
